Who am I?

I am a Philadelphia resident, originally from Indiana. Like many of you, I was raised eating the products that you commonly see in America’s grocery carts: toaster strudels, frozen pizza, white bread, peanut butter with added sugar and hydrogenated oils, potato chips with dairy ingredients, eggs, and even corned beef hash from a can.
It’s hard to imagine, but I never considered the effect of my food choices on other beings and the environment until I was in my twenties. I would encourage you to do the same but would not ask you to make a change in yourself that you do not desire. I’d ask you to consider the possibility that a different choice exists which, undoubtedly, would cause less demand for death of other animals and reduced use of this planet’s resources.
Remember, for you to live, it is not necessary that another being must die.

Help-Pecan encrusted tofu?????
My wife and I used to order this dish in a restaurant. I have tried several times to make it and have failed each time.
My basic process has been grind/chop the pecans, dredge the tofu, and then cook.
The problems have been as follows: (1) the pecans get to oily and clump, (2) pecans do not stick to the tofu, (3) when cooking the pecans fall off.
Any recommendations????

Daevid, I’m sorry I can’t be much help, since I haven’t made this before. You could probably use less oil and a non-stick or well-seasoned cast-iron skillet, make sure the pecans are ground up enough and mix them with cornmeal (or flour) as well, and also use moist tofu or marinated tofu so it has some moisture for the coating to stick to.

I used to work for a restuarant that encrusted tofu. This may not sound appealing but they would marinate it, cover with cornmeal, flour, whatever mix, then deep fry. The crust formed very well and was tasty.

Try adding a little cornstarch to the breading mix along with flour (or cornmeal). This helps further ‘glue’ everything together. The idea sounds yummy!

Utopian Kitchen website - the recipes look lovely - but its such a frustrating website to use. One should be able to just click on the name of the recipe and there it is - instead of trying to figure out how the heck to find it - shall I try this tag at bottom of it, or that one, or that one and - anywhichway run through all the other recipes on that tag hoping to find it!!You will be on a real winner with this website once one can easily find the recipes featured - until then!!!!!!

Hey, Cariad. As you look through my site and my about page, I make no claims to provide any recipes. These pictures are usually featured from cookbooks and the names of the cookbooks are given. That is explained in the about page as well. I also state that, if you would like a specific recipe, I will email it to you.
Even if I had chosen, considering only my own desires, to provide every single recipe on this site, I still would not, in deference to the cookbook authors. Hopefully, that is something you can understand. For example, if you worked at a bakery that asked you to make cupcakes for a certain price, yet the bakery management kept giving the cupcakes out for free, you wouldn’t be too happy about it, would you?
The way I have this set up, I think, makes everyone a “real winner” as you stated. Photos are shown, cookbooks are recommended, a recipe or two given out, but not the whole book. I hope it’s not too intimidating to ask me for something!
Good luck and let me know if you want a specific recipe. I’m sorry that you don’t like this blog, but, honestly, it’s my time that is used to create it and I like what I’ve done with it.

I’m a vegetarian and I’m trying to be a vegan. This is no easy task as I have many food allergies, two being peanuts and soy. Some of this stuff would accommodate my needs.

Your blog is fantastic. I was looking in google images for a picture of a square diet cookie (meal replacement cookie)
and they had one of your pictures. What type of camera are you using to take your pictures? You are amazing. I would like to learn some of your recipes do you have a cookbook
