Recipe for Belgian Endive with Gremolata and Vegetables using Radicchio and Additional Vegetables, bell peppers, cucumber, carrots, Belgian endive, radicchio, and mixed sprouts.  Gremolata has lemon juice, garlic, parsley, and oil (see note below).

I was very intrigued by this one.  It’s Swiss Chard, Pine Nuts, and Currants Stuffed in Vine Leaves.  Of course the vine leaves, being jarred, are not raw, but the filling is completely raw.

In the pistachio salad, apple salad, and “dolmas,” I did not add any oil, due to there already being fat content and plenty of flavor from the nuts, herbs, and citrus juices.  The gremolata has merely a tablespoon of oil, much less than called for.  My favorite of these four is a toss-up between the apple salad (the dressing is amazing) and the dolmas with the perfect filling mixture.  Where’s Mr. Marcus when you need him to swoop in and eat some dolmas?  These are better than Costco.

1,001 Low-Fat Vegetarian Recipes

The recipes in this book that appeal to me are the ones that are more vegetable- and legume-based; I find that there are a lot of cheesy and uninspired recipes, but with so many to choose from, it’s hard to NOT find one that you want to try.

This soup has white beans, sweet potatoes, and a Granny Smith apple, all pureed and then topped with the swirl of cranberry sauce.  I’ll say this - it’s one of the most simple soups I’ve ever eaten, with no added fat, but it’s also one of the tastiest!  I really like it a lot.

Make cupcakes, not war!  The frosting is unbelieveable.  Not “I can’t believe it’s vegan,” because I believe that vegan items taste better than omnivorous, anyway.  It’s unbelievably fabulous, rich, creamy, and sweet.  Party in your mouth.

Berry Oat Bars

La Dolce Vegan!

I started to make these with blueberries but then realized that the berries had gone bad.  No problem, I used a pear instead, with raspberry jam, and reduced the fat by one-half with applesauce.  I also used barley flour as opposed to any wheat flours.  Very good!

Joy’s Test Kitchen - Kale Salad

Raw kale with apples, carrots, currants (I used raisins), toasted sunflower seeds, and a hazelnut vinaigrette dressing.  This is a tasty salad.  Kale can be a bit harsh for some people when eaten raw; the apples and slight sweetness of the dressing take this green to new heights!

No Added Sugar Apple Pie

Sugar-Free Cooking With Stevia [omnivorous]

Mmm, this pie is very good! The recipe, including the crust, is very simple and easy to make and turns out wonderful. You can see that the crust is flaky and perfect texture. I used whole-grain spelt flour. Adding a little sugar and some health to the mix, we had Soyatoo whipped cream on top and a drizzle of agave nectar-cinnamon-flax oil mixture. wheat-free
