BBQ Sauce and Onion Shortcake

First of all, let me say that I love Ann Jackson’s books.  I know she doesn’t exist for my entertainment, but to read her words and tidbits amuses me so much!  I would get her cookbooks even if I wasn’t a cook, just for a good laugh.

The first thing I made today was the White Woman’s Barbeque Sauce.  Even before adding the tomato sauce, with just the molasses, onions, spices, and mustard, I could tell this was going to be some good sauce.  I had previously made BBQ with onions, chipotles, and coffee.  I quite like this one.  The only difference I would make is to slice my tofu thinner, to absorb more barbeque flavor, next time.

Also from the book is the onion shortcake, the little brown thingy in the background.  It doesn’t look great, but it’s good!!!  It has a slightly sweet flavor.  What it is is biscuit dough (I used spelt, so the whole meal is wheat-free), onions, and then topped off with a miso sauce and baked.

Also shown are mashed potatoes with gravy and corn (I don’t like my mashers without corn) and mustard greens.

    I think the corn and potatoes thing is a southern thing… my dad used to be that way. Interesting onion shortcake.

    That looks sooo good. I have one of her books.. I haven’t made any recipes from it yet.. although I should…

    btw, thanks for sharing your tips about how you eat.. I think the biggest way to lose/keep off the weight is to ask everyone who is slim how they do it! It’s nice to know that people do work at it.
